Question: What is your favorite apple?
My Answer: Granny Smith. Just the right amount of sour and sweet and crunch. They're also usually pretty big, too.

Granny Smith also, nice and tangy acidic apple. Pink Lady is a good backup.

Mutsu, because apples are supposed to be sour (unless they are covered in carmel).

When I want a nice tart green apple, a Granny Smith is always good.
Jonagold is one of my favorites (they grown them locally at Oak Glen, CA)
Fuji and Gala are good, too.

I hate all fresh apples (unless they are sweet with no skin and drenched in caramel). Just the thought of someone biting into one or cutting one makes me get goose bumps (I have them now)! It's like fingernails on a chalk board!
