Any Good Recipes?

Anyone got any good recipes? Easy to make? I'm a meat and potatoes type of guy - don't like a lot of vegetables (except as seasoning, or "plate veggies" like corn, green beans, peas, etc.) and I'm not a huge fan of sauces.

We've been eating at home a lot more lately, so if you've got a fairly good recipe, post a link to it in the comments (or post the recipe) and we'll have a look and perhaps give it a try.

  1. Turkey and Roasted Red Pepper Meat Loaf
    from "Real Simple" March 2008 pp. 274

    1 1/2 pounds ground turkey
    1 small yellow onion, chopped
    1/2 cup bread crumbs
    1 egg, beaten
    1 cup grated Parmesan cheese
    2 tablespoons plus 2 teaspoons Dijon mustard
    1 cup flat-leaf parsley, chopped
    1 7-once jar roaster red peppers, cut into 1/2-inch pieces
    Kosher salt and pepper

    Heat oven to 400 degrees

    Combine the turkey, onion, bread crumbs, egg, Parmesan, mustard, the parsley, red peppers, salt and pepper (to taste) in a large bowl.

    Shape the meat in to an 8-inch loaf and place in a baking dish. Bake until no trace of pink remains (internal temperature should be 165 degrees), about 45 minutes. Transfer to a cutting board and let rest 15 minutes before slicing.

    (I cheat and use regular red pepper, diced, in the mix. Also, get 85/15 ground Turkey, the leaner stuff doesn't brown and has a much drier texture when cooked.)
